Yup - I'd agree with this in the main. Just not the rest of your post Stuart :) I've (and I'm sure other people have as well) written tracks that relate to the mood I was in at the time. Sure they develop in ways that you don't originally intend (this is your 'knowing what sounds work') but the essence of what made you sit down at the sequencer in the first place can still be retained in some situations - in other situations, you might shoot off on different tangents...
