Sounds like Monome Norns is what you are looking for or build a
headless Raspberry Pi with Pure Data and an audio board. Organelle is
basically this.
Monome Aleph is long since discontinued...and honestly was never
completely a robust ecosystem to build on unless you know C.
If you already know SuperCollider than you'll get along great with a
Norns. Another option out there is a Mod Duo that runs ~gen patches
from Max, but to me it seemed geared towards guitarists that just want
to switch between patches mid song not really for making complete
tracks on.

I've been thinking of selling my Norns because I find myself recording
mostly on a laptop and mini-eurorack rig with expert sleepers.
