I also very much want to know what the best set up is. In short, what I want is a computer with soundcard and some software, and maybe a DAT machine. The only other hardware I'm prepared to buy is a basic keyboard for MIDI input (ie. a box of switches) and I've often thought it would be nice to have a box of sliders which had the feel of a mixer but connected straight to the computer and contained no audio hardware itself (I realize I would probably have to make that one myself). It often seems to me that, since CDs run at 41kHz and most PCs run in the MHz range, there should be more than enough processing power in the average PC to do music. If the right software is available (and fortunately these days it seems at last it is) there should be no reason to have boxes and boxes or racks full of hardware.
